Limited Edition Coffee Description

Our coffee comes from esteemed coffee producer, Jairo Arcila. Jairo began his coffee career at Colombia's second-largest coffee exporter, serving as their Mill Manager for over 40 years until his retirement in 2019. He purchased his first farm, Finca La Esmeralda, in 1987, where he planted his initial Caturra lot.

This particular coffee was grown at the family’s farm, Jardines Del Eden, where they produce many experimental lots. Sitting at 1850 metres above sea level, the farm is perfectly positioned for high-quality lots of gesha coffee. This microlot is 100% Yellow Gesha. This variety is known to perform well at these altitudes, and Cofinet was lucky enough to obtain Yellow Gesha seeds back in 2018 and has been growing them ever since.

After harvesting, the coffee was exposed to a dry aerobic fermentation of 24 hours before being placed inside Grainpro bags for 50 hours at a temperature below 22c. Then the whole cherries were placed on raised beds until 11% moisture content was achieved.
