Organic Espresso Description

Wild child is a seasonally adjusted espresso roast consisting of certified organic coffees. Currently it is a washed specialty regional coffee from the Faical coffee cooperative in Cajamarca in northern Peru.

Faical Coffee is a Peruvian company led by brothers Richard and Lenin Jaramillo, dedicated to supporting over 400 specialty coffee producers in Cajamarca. They offer guidance in every stage of production—from soil testing to post-harvest processing—to improve coffee quality and ensure fair prices. Committed to sustainable practices, Faical promotes environmentally friendly methods, benefiting both farmers and local ecosystems.

Cajamarca experiences a subtropical highland climate with steady temperatures between 16-20°C throughout the year. The majority of rainfall occurs during the warmest months, and along with the region's mineral-rich mountain soil, this makes the area especially fertile.

The cup is smooth and sweet with notes of dried fruit, honey, toffee and dark chocolate in the finish. Its creamy texture is an irresistible match for milk and makes for a delicious espresso coffee.

Coffee Breakdown

PERU ORGANIC CAJAMARCA 100%

Washed Process – This is a regional lot from the Faical Coffee cooperative, featuring Catimor, Caturra, Typica, and Mundo Novo varieties. Grown in the San Ignacio region of Cajamarca at an altitude of 1,550–2,150 masl. Certified organic.

  • TEMP - 94°C
  • RATIO - 1:1.6

This recipe is for espresso and developed on a commercial coffee machine. Use as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
