Our latest single origin coffee comes from the producer, Nestor Lasso. Alongside his brother Adrian, Nestor runs El Diviso farm in Colombia's Huila region, a hotspot for some of the most exciting coffees in the specialty market. Known for their innovative approach, the Lasso brothers have gained worldwide recognition for their complex and vibrant flavour profiles. Anticipate a sweet, fruity cup that pairs well with milk.

Our coffee comes from trailblazing coffee producer, Nestor Lasso, a producer partner we’ve had the pleasure of working with twice before. Alongside his brother Adrian, Nestor operates El Diviso farm, located in the heart of Colombia's renowned Huila region. This farm is a source of innovation and quality, producing some of the most sought-after coffees in the specialty coffee market.
The Lasso brothers deep understanding of their unique coffee and terroir, having planted and harvested a wide range of varietals, their relentless pursuit of excellence has led them to experiment with various fermentation techniques, including carbonic maceration and anaerobic fermentation. These methods and exotic varietals have resulted in complex and vibrant flavour profiles that have achieved international fame through the coffee competition space.
It’s not just unique varietals and experimental processing that showcases Nestors dedication to quality, as we can see with this vibrant washed Caturra. With tasting notes of blackcurrant, nectarine and grapefruit, the coffee is sweet and fruity with a balanced acidity. It finishes with a honey-like mouthfeel that shines when paired with milk.

This recipe is for espresso and developed on a commercial coffee machine. Use as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
