The Aricha washing station is a cornerstone of coffee production in Ethiopia's renowned Yirgacheffe region. Nestled near the village of Edido, this station works with over 300 smallholder farmers who cultivate coffee on small plots of land, often less than a hectare in size. These farmers companion plant coffee with subsistence crops like sweet potatoes, mangoes, and avocados, embracing sustainable and traditional agricultural practices.
Yirgacheffe’s unique geography makes it perfectly suited for coffee cultivation. Known as the “Land of Many Springs,” the region’s high altitudes, nutrient-rich clay soils, and abundant water sources provide ideal conditions for growing exceptional coffee.
At the Aricha mill, quality is paramount. Farmers hand-pick ripe cherries, which are delivered to nearby collection points before arriving at the washing station. Here, a dedicated team carefully sorts the cherries, removing any underripe, overripe, or damaged fruit. Accepted cherries are dried in thin layers on 280 coded drying beds, enabling precise traceability and consistent quality throughout the 18-day drying process.
The Aricha washing station also prioritises farmer empowerment through training programs that enhance cherry quality and handling practices. This commitment to excellence, paired with meticulous processing, ensures the production of outstanding coffee that embodies the best of the Yirgacheffe region.

This recipe is for espresso and developed on a commercial coffee machine. Use it as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your setup.
