Our coffee comes from the renowned coffee region of Huila, grown, harvested and processed by Nelson Rodriguez and his two sisters Lidia and Ana Yoheli at Finca El Diviso. This particular lot is a blend of caturra, variedad Colombia and castillo varieties, resulting in a well-rounded, balanced flavour profile with vibrant tasting notes of apricot, blackcurrant and lemon, with a juicy mouthfeel.

Producer Nelson Rodriguez represents a new generation in Colombian coffee farming. Both of his parents dedicated their lives to coffee, and now Nelson, along with his sisters, Lidia and Ana Yoheli, manage half of their family’s farm. Boasting nearly 20,000 trees, the farm produces varieties caturra, San Bernardo, catimor, variedad Colombia, pink bourbon, and castillo varietials.
Nelson is a member of the Los Guácharos association, a collective of independent, quality-focused smallholder producers in Bruselas, Southern Huila, near Pitalito. The group focuses on organic agriculture, developing their own fertilizers and fungicides, and installing advanced water filtration systems that use gravity, stones, and sand to remove mucilage residues from wastewater, preventing water contamination.
Our particular lot is a blend of two types: one of caturra and another of variedad Colombia mixed with castillo. Nelson processes his coffee on his father’s portion of the family farm, which houses the processing infrastructure. He begins by picking ripe cherries and fermenting them in a wooden tank for 24 to 36 hours. The cherries are then depulped and left to ferment in a ceramic-lined tank for about 48 hours. After fermentation, the seeds are washed and dried on large raised beds covered with shade cloth.
The coffee has a well-rounded, balanced flavour profile. It has vibrant tasting notes of apricot, blackcurrant and lemon, with a juicy mouthfeel.

This recipe is for espresso and developed on a commercial coffee machine. Use as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
